You’re either gonna love me or hate me for this one, folks. Maybe love me because it’s so good… and then hate me also because it’s so good? This is A KEEPER!

I got the recipe for this from this month’s issue of Taste of Home. Surprisingly, the recipe was really just on an ad inside the magazine for cream cheese! I couldn’t wait to try it, and I planned it as a special dessert for our dinner guests last night.

Spiced Pumpkin Cheesecake

  • 38 Nabisco® Ginger Snaps™, finely crushed
  • 1/4 cup finely chopped pecans
  • 1/4 cup butter, melted
  • 4 pkg. (8 oz. each) cream cheese, softened
  • 1 cup sugar
  • 1 can (15 oz.) pumpkin
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. vanilla
  • 4 eggs
  • whipped cream or topping (optional)

Preheat oven to 325°. Mix crumbs, nuts, and butter; press onto bottom and 1″ up side of 9-inch springform pan. Beat cream cheese and sugar with mixer until blended. Add pumpkin, spice, and vanilla; mix well. Add eggs, one at a time, mixing after each addition until just blended. Pour into crust.

Bake for 1 hour 20 minutes to 1 hour 30 minutes, or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate for at least 4 hours. Serve with a dollop of whipped cream.

Yield: 16 servings

I omitted the pecans in the crust because I didn’t have them on hand. I also dusted each serving of my cheesecake with a cinnamon/sugar mix (kept on hand for cinnamon toast, usually). It was PHENOMENAL!

    My OB is going to hate you…..once I make this and add on another 4 pounds this month. :)
