These were SO easy and SO good. We had them a few nights ago, but I’m lazy. *wink*

Heavenly Strawberry Tarts

  • 4 oz. cream cheese, softened
  • 1/4 cup sugar
  • 2 Tbsp. milk
  • 1-1/2 tsp. sour cream
  • 1/2 tsp. vanilla
  • 1 package (6 count) individual graham cracker tart shells*
  • 1-1/2 cups sliced unsweetened strawberries**
  • 1 cup strawberry glaze

* I like to make my own graham cracker cups usually, but this time around, I had the shells on hand, as well as not enough crumbs to make my own. If you feel like making your own, use a standard cheesecake crust recipe, but press the mixture in the bottoms and to the sides of well-greased muffin tins. Bake for 12 minutes, then cool completely. Turn out to a plate, and then proceed with the recipe. (A standard crust recipe will yield about 12 shells.)

** I sliced a pint of fresh strawberries, and the amount was spot-on.

In a small mixing bowl, beat the cream cheese until very, very soft; add sugar, milk, sour cream, and vanilla. Spoon into crusts. Combine the strawberries and glaze; spoon over cream cheese mixture. Refrigerate until serving.

Yield: 6 servings
